I just love the flavor combination of butternut squash and sage. This is a very rich pizza so I like to serve it with an arugula salad simply dressed in olive oil and aged balsamic.

  • 2 cups butternut squash (cut into 1/2 inch cubes)
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • kosher salt and pepper, to taste

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 sweet yellow onion, peeled and thinly sliced
  • splash of aged balsamic
  • small sprig of rosemary
  • 1 clove garlic, minced

  • 1 tablespoon unsalted butter
  • 1 handful sage leaves
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 1/2 recipe Wolfgang Puck's pizza dough (can be found online)
  • 1 cup whole milk mozzarella cheese, grated
  • 1/4 cup gorgonzola, crumbled

Directions
  1. Toss the butternut squash with the olive oil. Sprinkle with brown sugar and season with salt and pepper.
  2. Roast the squash in a preheated 350F oven until tender, about 30-40 minutes and set aside.
  3. Heat the oil and melt the butter in a pan. Add the onion and rosemary and cook on low until it starts to get caramelized. Add the splash of balsamic and saute for a few minutes. (I also like to add a little sugar to help with the caramelization). Take off the heat and add garlic. Set aside.
  4. Melt the butter in a pan. Add the sage leaves and saute until crispy, about 2-3 minutes.
  5. Roll out the pizza dough unto a pizza pan that has been lightly dusted with cornmeal or polenta. Spread the onions over the pizza dough followed by the butternut squash and the cheeses.
  6. Bake in a preheated 500F oven until golden brown on top, about 5-10 minutes. Remove from oven and top with the fried sage leaves to serve.
