From luisascatering 14 years agoIngredients
- 2 cups butternut squash (cut into 1/2 inch cubes) shopping list
- 1 tablespoon olive oil shopping list
- 2 tablespoons brown sugar shopping list
- kosher salt and pepper, to taste shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 1 tablespoon olive oil shopping list
- 1 tablespoon unsalted butter shopping list
- 1 sweet yellow onion, peeled and thinly sliced shopping list
- splash of aged balsamic shopping list
- small sprig of rosemary shopping list
- 1 clove garlic, minced shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 1 tablespoon unsalted butter shopping list
- 1 handful sage leaves shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 1/2 recipe Wolfgang Puck's pizza dough (can be found online) shopping list
- 1 cup whole milk mozzarella cheese, grated shopping list
- 1/4 cup gorgonzola, crumbled shopping list
How to make it
- Toss the butternut squash with the olive oil. Sprinkle with brown sugar and season with salt and pepper.
- Roast the squash in a preheated 350F oven until tender, about 30-40 minutes and set aside.
- Heat the oil and melt the butter in a pan. Add the onion and rosemary and cook on low until it starts to get caramelized. Add the splash of balsamic and saute for a few minutes. (I also like to add a little sugar to help with the caramelization). Take off the heat and add garlic. Set aside.
- Melt the butter in a pan. Add the sage leaves and saute until crispy, about 2-3 minutes.
- Roll out the pizza dough unto a pizza pan that has been lightly dusted with cornmeal or polenta. Spread the onions over the pizza dough followed by the butternut squash and the cheeses.
- Bake in a preheated 500F oven until golden brown on top, about 5-10 minutes. Remove from oven and top with the fried sage leaves to serve.
