Back From the Edge Soup

- home made egg noodles for two (using recipe of choice...OR bagged, if you must) shopping list
- 1/2 T. olive oil and 1/2 T. butter shopping list
- two 15 oz. cans chicken broth shopping list
- 1/2 cup celery "c's" (slices) shopping list
- 1/4 cup red onion, chopped shopping list
- 1/2 cup frozen mixed veggies (corn/pea/carrot combo) shopping list
- approx. 5 oz. frozen spinach shopping list
- garlic powder to taste shopping list
- black pepper to taste (optional) shopping list
How to make it
- Prepare homemade egg noodles...which is why this has longish prep time listed
- In saucepan in oil/butter cook up the celery and onion till translucent
- Add chicken broth and bring to boil
- If noodles are packaged, cook for length of time on pkg., adding mixed veggies for final 5 min. of cooking time
- If homemade noodles are used, simmer noodles and mixed veggies 5 minutes
- Add frozen spinach that has been partially thawed in microwave.
- Season all to taste, finishing out cooking sooner rather than later so that spinach does not become slimy - you want it to have that bright green colour.

At first I thought it was going to be a meal to recover from a night out and over indulging!!! I like it a lot. I must give this a try. Great recipe thanks for such a wonderful post!!!!
