Eggs Benedict with Crab Cakes and Hollandaise Sauce

- 4 eggs shopping list
- 2 English muffins shopping list
- 1 recipe of your favorite Hollandaise sauce shopping list
- chopped chives shopping list
- For crab cakes: shopping list
- 1 can lump crabmeat shopping list
- 1 cup fresh jumbo lump crabmeat shopping list
- 1 tablespoon Old Bay Seasoning shopping list
- salt and pepper shopping list
- breadcrumbs shopping list
- 2 teaspoons Dijon mustard shopping list
- 1/4 cup mayonaise shopping list
- 1 egg, slightly beaten shopping list
- 1/4 cup red bell pepper, diced shopping list
- 1 quarter of yellow onion, diced shopping list
- 1 stalk of celery, diced shopping list
- butter to fry the cakes shopping list
How to make it
- First make the crab cakes.
- Mix crabmeats, Old Bay seasoning, salt, pepper, mustard, mayonaise, egg, red pepper, onion, and celery.
- The mixture will be very moist. At this point add the breadcrumbs but only add enough to dry the mixure out some. Wet your hands and form the mixture into hefty sized patties. Add more breadcrumbs if mixture is still too sticky.
- Dredge the patties in breadcrumbs and place in the refridgerator.
- Refridgerate for at least 20 minutes.
- Melt about 3 tablespoons of butter in a saute pan.
- Add crab cakes and cook on each side until golden brown (about 7-9 minutes each side).
- Place cakes in a preheated oven set very low to keep them warm.
- Make hollandaise sauce and toast English muffins.
- Poach four eggs.
- To assemble:
- Place English muffins on two plates.
- Top with a crab cake on each half.
- Top crab cake with poached egg.
- Spoon sauce on top and around muffin.
- Sprinkle chives all over.
- Serve immediately.
