How to make it

  • preheat oven to 350
  • spray miniature muffin pan with nonstick cooking spray
  • in a large bowl combine cake mix, pudding mix, eggs and 3/4 cup oil beat at medium speen with a electric mixer for 2 minutes
  • spoon about 1 tablespoon of batter into each muffin cup bake for 12 mins. turn cakes onto a cloth towel.
  • in another bowl sift confectioners sugar, lemon zest, lemon juice, remaining 3 tablespoons of oil and water. keep stirring until smooth. dip cakes into glaze mixture while cakes or still warm. make sure to cover as much as possible. place cakes on a wire rack with wax paper underneath to catch drips. make sure glaze is set before storing in a airtight container
