- 1 ( 18.25 oz ) box yellow cake mix shopping list
- 1 ( 3.4 oz ) box instant lemon- flavored pudding mix shopping list
- 4 large eggs shopping list
- 3/4 cup confectioners' sugar shopping list
- 1 tablespoon lemon zest shopping list
- 1/3 cup fresh lemon juice shopping list
- 3 tablespoons water shopping list
- 3/4 cup plus 3 tablespoon vegetable oil, divided shopping list
How to make it
- preheat oven to 350
- spray miniature muffin pan with nonstick cooking spray
- in a large bowl combine cake mix, pudding mix, eggs and 3/4 cup oil beat at medium speen with a electric mixer for 2 minutes
- spoon about 1 tablespoon of batter into each muffin cup bake for 12 mins. turn cakes onto a cloth towel.
- in another bowl sift confectioners sugar, lemon zest, lemon juice, remaining 3 tablespoons of oil and water. keep stirring until smooth. dip cakes into glaze mixture while cakes or still warm. make sure to cover as much as possible. place cakes on a wire rack with wax paper underneath to catch drips. make sure glaze is set before storing in a airtight container
