Mexico Chiquito Cheese Dip Recipe
Mexico Chiquito is a landmark restaurant here in Little Rock for over 50 years. This is very close to their famous cheese dip. I'm not sure what it is about Arkansans and cheese dip but there is a definite love affair going on between the two!

Ingredients
  • 1 stick of butter
  • 4 tablespoons flour
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon hot pepper sauce
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon ketchup
  • a dash of salt
  • 2 cups milk
  • 1 pound Kraft American Cheese (the real kind), cut into cubes

Directions
  1. Melt butter in a saucepan. Add flour and stir around until flour loses its raw taste, about 2 minutes.
  2. Add the remaining ingredients including the milk.
  3. Then add the cheese.
  4. Stir until cheese is melted.
  5. Serve with tortilla chips.
