Mexico Chiquito Cheese Dip

Mexico Chiquito is a landmark restaurant here in Little Rock for over 50 years. This is very close to their famous cheese dip. I'm not sure what it is about Arkansans and cheese dip but there is a definite love affair going on between the two!
Ingredients
- 1 stick of butter shopping list
- 4 tablespoons flour shopping list
- 1 teaspoon paprika shopping list
- 1 teaspoon chili powder shopping list
- 1 teaspoon cumin seeds shopping list
- 1 teaspoon hot pepper sauce shopping list
- 1 teaspoon cayenne pepper shopping list
- 1/2 teaspoon garlic powder shopping list
- 1 tablespoon ketchup shopping list
- a dash of salt shopping list
- 2 cups milk shopping list
- 1 pound Kraft American cheese (the real kind), cut into cubes shopping list
How to make it
- Melt butter in a saucepan. Add flour and stir around until flour loses its raw taste, about 2 minutes.
- Add the remaining ingredients including the milk.
- Then add the cheese.
- Stir until cheese is melted.
- Serve with tortilla chips.
