Ingredients
  • 2 tblsp vegetable oil
  • 4 (8 oZ) bone-in pork chops
  • seasoning - salt and pepper
  • 1/4 cp butter
  • 3/4 cp sliced shallots
  • 1 1/2 cps fresh black cherries, pitted and halved
  • 2 tblsps red wine (table is fine)
  • 1/4 cp beef stock
  • 1/4 tsp dried rosemary leaves, crumbled

Directions
  1. Oven to 350 degrees F
  2. Prepare baking sheet with aluminum foil.
  3. Heat the vegetable oil over medium-high heat
  4. Season the pork chops with salt and pepper
  5. Brown pork chops in the hot oil (should be about 120 seconds each side)
  6. Place the pork chops on baking sheet.
  7. Bake until the pork chops are no longer pink in the center (about 20 minutes).
  8. While baking, melt butter in the same skillet over medium heat
  9. Stir in shallot & cherries
  10. Cook until the shallot has begun to soften, about 120 seconds
  11. Mix in the red wine and beef stock and simmer
  12. Season with rosemary, and simmer until the sauce has reduced and thickened.
  13. Season to taste with salt & pepper before pouring over the pork chops to serve.
