How to make it

  • Preheat oven to 350 degrees with racks in upper and lower thirds.
  • Heat butter in a 10" heavy skillet over medium heat til milk solids on bottom are a dark chocolate brown.
  • Transfer to a shallow bowl and chill in freezer until just congealed,about 15 mins.
  • Blend brown butter with sugars,flour,baking soda,salt and eggs in a food processor till smooth. Transfer to a bowl and stir in pecans.
  • Spoon ablespoons of batter onto parchment-lined baking sheets,arranging about 1" apart.
  • Bake,switching positions of sheets halfway through,till browned,15 to 18 mins. Transfer cookies to a rack to cool (cookies will crisp as they cool.

    These look good, Pat. Haven't seen a cookie before where the flour is put in the food processor...are they crunchy-crisp cookies?
