Seafood Linguine Mornay Recipe
This comes from a Weight Watchers cookbook, but it is full of flavor and totally satisfying. There are no point values assigned because this recipe was created before that system was enacted.

Ingredients
  • 2 Tbsp margarine, divided
  • 1 cup broccoli florets
  • 1/2 cup each sliced mushrooms and diced onion
  • 2 Tbsp all-purpose flour
  • 2 cups skim milk
  • 2 oz each Swiss cheese, shredded and grated Parmesan cheese
  • 4 oz each cooked crabmeat and cooked shrimp
  • 2 cups cooked linguine
  • 1/2 tsp salt
  • pepper to taste

Directions
  1. In a 10-inch nonstick skillet, heat 1 Tbsp margarine until bubbly and hot; add broccoli, mushrooms, and onion. Cook, stirring quickly and frequently until vegetables are tender crisp. Remove from skillet and set aside.
  2. In the same skillet, heat remaining margarine until hot and bubbly. Sprinkle with flour and stir quickly to combine. Cook , stirring constantly for one minute. Sprinkle with salt and pepper
  3. Gradually stir in milk; cook over medium heat, stirring constantly until smooth and thickened.
  4. Add cheese and cook, stirring frequently, until melted.
  5. Return sauteed vegetables to skillet; add crabmeat, shrimp and linguine and toss to combine and until thoroughly heated through.
