Artichoke And Mushroom Chicken Recipe
ARTICHOKE AND MUSHROOM CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Phillips Estate in Euless, Texas in 1991.

Ingredients
  • 1 large frying chicken
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/8 teaspoon freshly ground black pepper
  • 12 ounces marinated artichokes
  • 2 tablespoons butter
  • 1 can cream of mushroom soup

Directions
  1. Coat chicken with flour, salt, paprika and pepper.
  2. Drain marinade from artichokes into large skillet then add butter and heat until melted.
  3. Arrange chicken in skillet and fry then simmer until chicken is almost tender about 25 minutes.
  4. Add artichoke hearts and cream of mushroom soup then continue cooking 10 minutes.
  5. Serve with rice or egg noodles.
