Buffet Roast Recipe
Made this for a party, didn't think it would so popular until I get several recipe request. People liked the sauerkraut and brown sugar combo. The meat was fork tender, and I had shredded it Tastes even better when reheated the following day!

Ingredients
  • 1 3 lb boneless chuck or similar beef roast
  • 27 oz can sauerkraut drained
  • 1 lb brown sugar
  • 28 oz can whole tomatoes undrained
  • 1 large onion chopped
  • 1 apple, peeled cored and sliced
  • salt and pepper to taste

Directions
  1. Place meat in a Dutch oven.
  2. Top with the sauerkraut, tomatoes, sugar, apple, onion and salt and pepper.
  3. Cover and simmer several hours until meat is very fork tender.
  4. Correct seasonings if need be.
  5. Probably may be also made in a slow cooker
