Cream Wafers

These cute little sandwich cookies are tender,buttery,melt-in-your-mouth. Great for the holiday.
Ingredients
- 1/2 c butter softened shopping list
- 1 c flour shopping list
- 3 Tbs heavy whipping cream shopping list
- sugar shopping list
- Filling: shopping list
- 1/4 c butter,softened shopping list
- 3/4 c confectioners' sugar shopping list
- 1/2 tsp vanilla shopping list
- 1-1/2 to 2 tsp. heavy whipping cream shopping list
- 1 drop each red and green food coloring shopping list
How to make it
- In small bowl,beat butter flour and cream. Cover,refrigerate 1 hour or till easy to handle.
- On lightly floured surface,roll out dough to 1/8" thickness. Cut with a floured 1-1/4" round cookie cutter.Place 1" apart on ungreased baking sheets. Sprinkle with sugar. Prick each cookie 3 to 4 times with fork.
- Bake at 375 degrees for 7 to 9 mins. or till set. Remove to racks to cool.
- In small bowl,combine butter,confectioners' sugar,vanilla and enough cream to achieve desired consistancy. Remove 1/2 to another bowl;tint one portion of filling with red food coloring and the other with green. Carefull spread filling on bottom half of cookie;top with remaining cookies.
