Barley Mushroom Pilaf

- 3/4 cup sliced baby bella or button mushrooms shopping list
- 1 large carrot -diced shopping list
- 2 TBSP olive oil shopping list
- 1 cup pearled barley shopping list
- 4 cups beef stock shopping list
- 2 TBSP chopped green onions shopping list
- 1/4 tsp crushed dry rosemary shopping list
- 2 sprigs fresh thyme shopping list
How to make it
- Heat oil in a medium sauce pan.
- Add mushrooms and carrots and stir until mushrooms are softened.
- Add the rest of the ingredients and bring to a boil
- Reduce heat, cover and simmer until liquid is absorbed, about 45 minutes.
