Shrimp Blue Cheese and Mushroom Salad

This is a recipe that I got from a co-worker a few months back. She brought this to the office and it was an instant hit. Greatness in a bowl. Enjoy
Ingredients
- 1 cup salad oil shopping list
- 1/4 cup red wine vinegar shopping list
- 1 egg yolk shopping list
- 1 tablespoon spicy mustard shopping list
- Salad: shopping list
- 1 head butter lettuce shopping list
- 1 head endive salad shopping list
- 2 ounces small shrimp shopping list
- 2 ounces Roquefort cheese crumbled shopping list
- 1 bay mushroom shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- Chopped parsley for garnish shopping list
How to make it
- Mix egg yolk and mustard with whip then add vinegar.
- Slowly pour in salad oil while whipping then season with salt and pepper.
- Wash butter lettuce and endive then toss with dressing and sprinkle with pepper.
- Add shrimp, cheese, mushrooms and parsley then toss gently and serve.
