turkish ratatouille

- 2 large potatoes,peeled and cubed shopping list
- 1 large or 2 medium aubergines cut into cubes shopping list
- 1 large succhini cut into cubes shopping list
- 1 onion chopped shopping list
- 3 cloves of garlic thinly sliced shopping list
- 1 hot red chilli finely chopped shopping list
- 1 green pepper deseeded andchopped shopping list
- 1 red pepper deseeded and chopped shopping list
- 1 large tomato diced shopping list
- 1/4 cup virgin olive oil shopping list
- 1 cup hot water shopping list
- salt to taste shopping list
- coarse grind black pepper to taste shopping list
- 1/2 teaspoon chopped fresh min shopping list
- 3 tablespoons fresh chopped dill shopping list
How to make it
- saute chilli and onion onion over medium heat till translucent.
- edd garlic and saute for a while. stir in peppers and cook for for
- 2 minutes.add potatoes,aubergine and zucchin in that order, cook each for 2 minutes. add salt and pepper. and add hot water. sitr for few times. spread diced tomatoes all over the vegetables. cover with lid and cook on low heat till the potatoes are soft about 20 minutes.
- ladle in four seperate plates and generally sprinkle ech with the dill and mint mix
