What a great recipe! I usually rinse the sauerkraut a couple of times before using, and skip the sour cream and bacon. (Except for the times I put raw bacon slices into the pot - that's also yummy.)

I serve dark bread and sweet butter with the brats and the kraut. This is a really easy dish to entertain a crowd. Even people who don't like kraut give this a try. I make baked apples with a gingersnap crumble for dessert. Beer is a natural.
