Got this from a church cookbook years ago...I have also made using chicken instead of veal...Great over egg noodles

Ingredients
  • 1 lb. boneless veal, cut into 1/2 inch cubes
  • 3 tbls. olive oil
  • 1/2 stick butter
  • 1 tbls. shallots, finely chopped
  • 1/4 cup dry white wine
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tbls. parsley, chopped

Directions
  1. Salt and pepper veal
  2. In skillet, heat oil to medium heat
  3. Add veal and saute until just done
  4. Remove from pan
  5. Add butter to pan and melt
  6. Add shallots and cook until tender
  7. Add wine and reduce by half
  8. Add broth and reduce by half
  9. Stir in cream and cooked veal
  10. Bring to almost boil
  11. Remove from heat
  12. Garnish with parsley
