Garlic Beef This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marcus Estate in Greenville, Texas in 1994.

Ingredients
  • 2 teaspoons oil
  • 2 pounds beef tenderloin cut into 1" strips
  • 6 cloves garlic sliced
  • 2-1/4 cups chicken broth
  • 1/4 cup lemon juice
  • 1/3 cup dry white wine
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. In large skillet heat oil to medium high.
  2. Stir fry beef strips until well browned on both sides.
  3. Remove beef pieces and set aside then sauté garlic slices until soft and golden.
  4. Stir in broth, lemon juice and wine.
  5. When mixture is hot reduce heat to medium and return beef to skillet.
  6. Simmer a few minutes to heat through then serve over rice.
