How to make it

  • Pre heat oven to 350º.
  • SAUCE
  • Heat oil in frying pan.
  • Sauté onion, celery, bell pepper, and garlic until tender.
  • Add tomatoes, chicken stock, mushroom, black olives and herbs.
  • Bring to a boil and then lower the heat to simmer for about 30 minutes to the consistency of a thick paste.
  • Season with a touch of salt if needed.
  • The sauce can be made ahead of time, even a day before and kept in the refrigerator or you can use your own favorite tomato sauce
  • CHICKEN:
  • Slice each chicken breast in half, horizontally, cover with waxed paper and pound to a thickness of about ¼ inch,
  • Season with salt and pepper
  • Dredge in flour.
  • Heat the remaining olive oil and 2 T butter in the frying pan after the oil and butter foam
  • Sauté each chicken scallop until golden brown;
  • keep warm until all chicken is sautéed.
  • ASSEMBLE CASSEROLE:
  • Layer chicken with cheeses and sauce, ending with a layer of cheese and breadcrumbs,
  • Bake uncovered for about 30 - 45 minutes until top is brown and bubbly,
