How to make it

  • Preheat oven to 350F and line a 9x9" pan with parchment.
  • In a small bowl whisk together the flaxseed and hot water. Let stand 5-10 minutes.
  • In a medium bowl, whisk together flour, baking powder, salt and cider drink mix. Set aside.
  • In a large bowl beat oil, brown sugar, vanilla and the flaxseed mixture.
  • Stir in dry ingredients until just combined, then fold in the apples.
  • Spread into the pan and sprinkle with the butterscotch chips.
  • Bake for 25-35 minutes. Cool completely in the pan before cutting.
