For me, meatloaf is one of those foods that I grew up with, meatloaf reminds me of when I was a kid back when I lived at home with my parents. It reminds me of Sundays during my childhood.

Ingredients
  • 1 1/2 lbs ground beef (ground shoulder roast is good)
  • ¾ cup of bread crumbs (plain or seasoned)
  • 1 egg with a splash of milk (beaten)
  • 1 small onion (finely chopped)
  • 1 small tomato (chopped)
  • Salt & black pepper to taste
  • Wrap in bacon slices (optional)
  • NOTE: other chopped vegetables can be added (celery, bell peppers)
  • Sauce:
  • 4 Tblsp of ketchup
  • 1 Tblsp of prepared Dijon mustard or yellow mustard
  • 2 Tblsp of white or brown sugar
  • 2 Tblsp of any favorite BBQ Sauce

Directions
  1. (Preheat oven to 350°F.)
  2. Combine the meatloaf ingredients and place into a sprayed loaf-baking dish.
  3. For the sauce, Combine sauce ingredients and pour on top and sides of meatloaf.
  4. Bake for about 1 hour or a little more until done.
  5. NOTE- A second batch of sauce is good to serve with the meatloaf on the table.
