Candied Ginger Shortbread

- 1 cup butter (no substitutes) shopping list
- `1/3 cup icing sugar shopping list
- 2 cups flour shopping list
- 3/4 tsp baking powder shopping list
- 1 tsp ground ginger shopping list
- 1/4 tsp salt shopping list
- 1/3 cup chopped walnuts shopping list
- 1/4 cup minced crystallized ginger shopping list
How to make it
- Using beaters, beat butter with sugar until light and fluffy.
- In a separate bowl, combine flour, baking powder, ginger and salt. Gradually stir flour mixture into butter mixture.
- Stir in walnuts and crystallized ginger.
- Transfer mixture to a lightly floured work surface.
- Shape dough into 2-10-inch logs. cover with plastic wrap and refrigerate up to 24 hours, or a minimum of 2 hours.
- Preheat oven to 350F.
- Slice logs in to 1/4-inch thick slices. Place 2-inches apart on parchment lined cookie sheets.
- Bake in the center of oven for 12-15 minutes, or until golden.
- Cool for 5 minutes on pan before removing to a rack.
- Makes 3 dozen cookies.
