Candied Ginger Shortbread Recipe
I haven't tried this yet, I think I will make this as part of my Xmas baking. This was featured in the local newspaper. Looks delicious. Prep time does not include chill time.

Ingredients
  • 1 cup butter (no substitutes)
  • `1/3 cup icing sugar
  • 2 cups flour
  • 3/4 tsp baking powder
  • 1 tsp ground ginger
  • 1/4 tsp salt
  • 1/3 cup chopped walnuts
  • 1/4 cup minced crystallized ginger

Directions
  1. Using beaters, beat butter with sugar until light and fluffy.
  2. In a separate bowl, combine flour, baking powder, ginger and salt. Gradually stir flour mixture into butter mixture.
  3. Stir in walnuts and crystallized ginger.
  4. Transfer mixture to a lightly floured work surface.
  5. Shape dough into 2-10-inch logs. cover with plastic wrap and refrigerate up to 24 hours, or a minimum of 2 hours.
  6. Preheat oven to 350F.
  7. Slice logs in to 1/4-inch thick slices. Place 2-inches apart on parchment lined cookie sheets.
  8. Bake in the center of oven for 12-15 minutes, or until golden.
  9. Cool for 5 minutes on pan before removing to a rack.
  10. Makes 3 dozen cookies.
