How to make it

  • Using beaters, beat butter with sugar until light and fluffy.
  • In a separate bowl, combine flour, baking powder, ginger and salt. Gradually stir flour mixture into butter mixture.
  • Stir in walnuts and crystallized ginger.
  • Transfer mixture to a lightly floured work surface.
  • Shape dough into 2-10-inch logs. cover with plastic wrap and refrigerate up to 24 hours, or a minimum of 2 hours.
  • Preheat oven to 350F.
  • Slice logs in to 1/4-inch thick slices. Place 2-inches apart on parchment lined cookie sheets.
  • Bake in the center of oven for 12-15 minutes, or until golden.
  • Cool for 5 minutes on pan before removing to a rack.
  • Makes 3 dozen cookies.
