Ingredients
  • 2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 lb boneless chicken breasts, cut into strips
  • 1 tbsp oil; divided
  • 1 cup UNCOOKED rice
  • 1 can chicken broth
  • 2 cups water
  • 1/2 cup salsa
  • 2 cups frozen mixed vegetables

Directions
  1. Combine cumin & garlic.
  2. Season chicken with cumin mixture.
  3. Heat half the oil and medium-high heat in a large skillet.
  4. Add chicken and cook until browned, stirring often.
  5. Remove chicken.
  6. Heat remaining oil and add rice. Stirring constantly until browned. Stir in broth, water and salsa.
  7. Heat to a boil.
  8. Cover and cook over low heat for 15 minutes.
  9. Stir in vegetables and Cover, cooking another 15 minutes or until chicken is cooked through.
