Mexican Cottage Pie

- 1/2 cup butter, softened shopping list
- 2/3 cup white sugar shopping list
- 1/4 cup honey shopping list
- 2 eggs shopping list
- 1/2 teaspoon salt shopping list
- 1 1/2 cup flour shopping list
- 3/4 cup cornmeal shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 cup milk shopping list
- 3/4 cup frozen corn kernels, thawed shopping list
- Preheat oven to 400 degrees. Grease a 9 x 13 baking dish. shopping list
- In a large mixing bowl, blend together butter, sugar, honey, eggs and salt. Next, mix in the flour, cornmeal and baking powder. Blend well. shopping list

- 1/4 teaspoon garlic powder shopping list
- 1/4 teaspoon onion powder shopping list
- 1/4 teaspoon crushed red pepper flakes shopping list

- 1/2 teaspoon paprika shopping list
- 1 1/2 teaspoon ground cumin shopping list
- 1 teaspoon sea salt shopping list
- 1 teaspoon black pepper shopping list
- In a bowl, mix all ingredients. Set aside. shopping list
- Meat Mixture shopping list
- Ingredients: shopping list
- 1 lb ground beef (or ground turkey, if you prefer) shopping list
- 1 onion, chopped shopping list
- 1 green pepper (optional) shopping list
- garlic powder to taste shopping list
- salt and pepper to taste shopping list
- 1 can (14.5 oz) diced tomatoes with green chilies shopping list
- 3/4 cup hot water shopping list
- 1 can (11oz) whole kernel corn, drained shopping list
- 1 cup shredded Mexican-style or cheddar cheese shopping list
How to make it
- Oven set to 400 degrees.
- In a skillet, combine meat and onions. Cook until meat is thoroughly browned and onions are tender. Drain grease.
- Season with garlic powder, salt and pepper to taste.
- Mix in tomatoes and cook on medium heat for 5 minutes.
- Stir in taco seasoning mixture and water. Bring to a boil then reduce heat to low, continuing to cook for 5 minutes until thickened.
- Transfer meat mixture into 9 x 13 baking dish and spread on top of the cornbread evenly.
- Next, smooth a layer of corn kernels on top, followed by a cup of cheese.
- Pour the remaining cornbread mixture on top and smooth out evenly.
- Cook for 20 minutes.
- Garnish with sour cream, olives, cheese or any other favorite Mexican dish accompaniments.
- Voila! You have a tasty Mexican Cottage Pie!
