Greek Tiropeta- cheese pie

- 1 lb feta cheese, crumbled or coarse grated shopping list
- 1 lb small curd cottage cheese shopping list
- 1 lb farmers cheese shopping list
- 8 eggs shopping list
- 1 lb phyllo dough shopping list
- 1 lb melted buttered , clarifies shopping list
How to make it
- Beat all the cheese together until they are fluffy
- Beat in the eggs one at a time
- Clarify the butter by melting it and let it sit for a few minutes,
- Skim off the foamy part and reserve it
- Butter the bottom of a 10 x 14 baking pan
- Layer 10 sheets of phyllo buttering each sheet
- Pout the cheese mixture over the dough
- Add the reserved foamy butter over that
- Cover that with 10 more sheets of phyllo, buttering each sheet
- Tuck in the edges of the dough and butter the top well
- Bake in a 350F oven for about one hour
- Cool completely and cut into squares
- Note: optional, I like to add some garlic or chopped herbs in the cheese mixture such as fresh dill or basil
