How to make it

  • Beat all the cheese together until they are fluffy
  • Beat in the eggs one at a time
  • Clarify the butter by melting it and let it sit for a few minutes,
  • Skim off the foamy part and reserve it
  • Butter the bottom of a 10 x 14 baking pan
  • Layer 10 sheets of phyllo buttering each sheet
  • Pout the cheese mixture over the dough
  • Add the reserved foamy butter over that
  • Cover that with 10 more sheets of phyllo, buttering each sheet
  • Tuck in the edges of the dough and butter the top well
  • Bake in a 350F oven for about one hour
  • Cool completely and cut into squares
  • Note: optional, I like to add some garlic or chopped herbs in the cheese mixture such as fresh dill or basil

    Your recipe is interesting indeed . I am sorry to say that this recipe is far from being "authentic Greek" , though . Please excuse me for deleting it from this group . I wish to present traditional , authentic Greek dishes . Sorry once more .
