How to make it

  • Clean mushrooms with a damp, soft towel; set aside.
  • Mix dry ingredients in a bowl and season; set aside.
  • Combine eggs and hot sauce in a separate bowl; set aside.
  • Gently heat oil in a large pan until a cube of bread turns golden.
  • Meanwhile start dipping the 'shrooms alternately in the egg mixture and the panko mix being sure to thoroughly coat each button with the crumbs. Stack on a plate and (yes), set aside.
  • Gently lower each button into the hot oil and fry evenly till golden brown being sure not to overcrowd the pan. Remove, drain and place on absorbent paper.
  • Serve hot with a squeeze of lemon...
