Sh-panko-ed Shrooms

- 1lb or 500g button mushrooms shopping list
- 1/4 cup panko (Japanese breadcrumbs) or dried breadcrumbs shopping list
- 2 cups olive oil (or your choice) to fry shopping list
- 2 tbs cornstarch shopping list
- 2 tbs garlic powder shopping list
- 1 tbs onion flakes shopping list
- 1 tbs red pepper flakes shopping list
- 1 tbs thyme, dried shopping list
- 2 eggs, beaten shopping list
- 2 tsp of your favorite hot sauce shopping list
- salt and pepper to season shopping list
- lemon wedges for garnish shopping list
How to make it
- Clean mushrooms with a damp, soft towel; set aside.
- Mix dry ingredients in a bowl and season; set aside.
- Combine eggs and hot sauce in a separate bowl; set aside.
- Gently heat oil in a large pan until a cube of bread turns golden.
- Meanwhile start dipping the 'shrooms alternately in the egg mixture and the panko mix being sure to thoroughly coat each button with the crumbs. Stack on a plate and (yes), set aside.
- Gently lower each button into the hot oil and fry evenly till golden brown being sure not to overcrowd the pan. Remove, drain and place on absorbent paper.
- Serve hot with a squeeze of lemon...
