Parmesan Bruschetta Chicken

- 4 skinless, boneless chicken breat halves shopping list
- all purpose flour shopping list
- 2 eggs beaten shopping list
- 1/4 cup, finely grated parmesan cheese shopping list
- 1/4 cup fine bread crumbs shopping list
- 1 TBSP butter melted or olive oil shopping list
- 1/2 tsp salt 1/4 tsp freshly ground pepper shopping list
- 2 cans Aylmer Accents died tomatoes garlic and olive oil shopping list
How to make it
- Preheat oven to 375 degrees
- dip chicken breats in flour, then in eggs
- Place in a greased dish large enough to allow a little space between breasts, such as a 9x12 dish
- Stir Parmesan with bread crumbs and butter, sprinkle over each breast
- Loosely cover dish with foil and bake in centre of preheated oven for 20 minutes
- add salt and pepper to 2 cans of Alymers tomatoes
- uncover chicken and continue baking until crumbs are brown
- heap tomatoe mixture onto each breat and return to oven for 3 to 4 minutes
