How to make it

  • 1)Preheat oven to 350. Spray an 8-inch square baking pan with vegetable cooking spray. Dust with flour; tap out excess.
  • 2)Place candies in a resealable plastic bag and seal. Using a rolling pin or meat mallet, crush candies into small pieces. Set aside.
  • 3)On a sheet of waxed paper, sift together flour, cocoa, baking powder, baking soda, and salt.
  • 4)In a large mixing bowl, using an electric mixer set on high speed, beat sugar and margarine until light and fluffy. Beat in egg, egg whites, and peppermint extract. At low speed, beat in flour mixture. Stir in crushed candies.
  • 5)Spoon batter into prepared pan; smooth top. Bake until a toothpick inserted in the center comes out almost clean, about 25 minutes. ( Do not over-bake. ) Place pan on a wire rack and cool completely. Cut into 16 squares. Dust with confectioners' sugar.
