Zoes mums boiled mayo

- 1 egg shopping list
- 3 Tbsp white sugar shopping list
- 6 Tbsp milk shopping list
- 2 tsp dry mustard powder shopping list
- 1 1/2 Tbsp white vinegar shopping list
- 1 Tbsp butter shopping list
- 1/2 tsp salt shopping list
How to make it
- In a jug, whisk the egg and sugar.
- Add the milk, mustard and vinegar, mix well.
- Put it all in a small saucepan, with the butter and salt and heat over a medium-low heat, WHISKING CONSTANTLY, for about 2-3 minutes until it thickens. (it doesnt go as thick as store-bought mayo, maybe like...a thin custard?)
- Remove from heat and store in an airtight container in the fridge.
- Makes about 200mL.
- And it gets a little thicker upon standing.
- ohmygoshitssogood.
- Try it in a layered salad of cold boiled sliced potatoes, sliced red onion and tinned baby peas. mmmmm just like nanna makes.
