Ingredients
  • 1 egg
  • 3 Tbsp white sugar
  • 6 Tbsp milk
  • 2 tsp dry mustard powder
  • 1 1/2 Tbsp white vinegar
  • 1 Tbsp butter
  • 1/2 tsp salt

Directions
  1. In a jug, whisk the egg and sugar.
  2. Add the milk, mustard and vinegar, mix well.
  3. Put it all in a small saucepan, with the butter and salt and heat over a medium-low heat, WHISKING CONSTANTLY, for about 2-3 minutes until it thickens. (it doesnt go as thick as store-bought mayo, maybe like...a thin custard?)
  4. Remove from heat and store in an airtight container in the fridge.
  5. Makes about 200mL.
  6. And it gets a little thicker upon standing.
  7. ohmygoshitssogood.
  8. Try it in a layered salad of cold boiled sliced potatoes, sliced red onion and tinned baby peas. mmmmm just like nanna makes.
