How to make it

  • In a jug, whisk the egg and sugar.
  • Add the milk, mustard and vinegar, mix well.
  • Put it all in a small saucepan, with the butter and salt and heat over a medium-low heat, WHISKING CONSTANTLY, for about 2-3 minutes until it thickens. (it doesnt go as thick as store-bought mayo, maybe like...a thin custard?)
  • Remove from heat and store in an airtight container in the fridge.
  • Makes about 200mL.
  • And it gets a little thicker upon standing.
  • ohmygoshitssogood.
  • Try it in a layered salad of cold boiled sliced potatoes, sliced red onion and tinned baby peas. mmmmm just like nanna makes.
