Ingredients
  • 16 pieces (1lb.) bacon
  • 1 pkg. bleu cheese (about 3.6oz.) or any cheese you like (bleu cheese is best because it doesn't melt out the sides as much)
  • 1 jalapeno, sliced
  • 16 large green olives (I use the queen, pimento stuffed)
  • 16 toothpicks, soaked in hot water

Directions
  1. Preheat oven to 400. Let toothpicks soak in hot water for about 10 minutes so they do not burn when they are put in the oven. Line a cookie sheet with aluminum foil and spray with cooking spray.
  2. Lay out a piece of bacon in a straight line. Place about 1/2 tbsp. of bleu cheese at one end. Place a jalapeno slice on top of the cheese. Then place 1 olive on top of the jalapeno.
  3. Starting with the end where all the stuffing is, roll the bacon up until you reach the other end. Insert a toothpick through the middle (make sure to pierce the olive) to hold the wrap together. Place on a greased cookie sheet. Repeat with remaining bacon pieces, cheese, jalapenos, and olives. Top roll-ups with coarse ground black pepper and bake for 20-25 minutes. Turn pan around and bake for an additional 5 minutes or until bacon is at desired crispness. Please allow roll-ups to cool for about 5-7 mintes. Enjoy!
