Sweet Potato Pudding

A different way to have your Thanksgiving Sweet Potatoes
Ingredients
- 6 sweet potatoes shopping list
- 3 tablespoons butter, melted shopping list
- 1 tablespoon butter(for mashing) shopping list
- 1/4 cup cream shopping list
- 1/8 cup whiskey(Jack Daniels) or rum (Meyers) shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 350
- Wash and peel sweet potatoes and remove blemishes
- Boil or steam until fork tender
- Drain and mash with a tablespoon of butter
- Heat cream until hot but not boiling
- Beat potatoes with a mixer, pouring in cream in a thin stream
- Beat until fluffy and beat in remaining ingredients
- Transfer to a baking dish sprayed with non stick cooking spray
- Bake for 20 minutes until brown
