How to make it
- Combine all ingredients except salt in a large pot. Bring to a boil, then simmer, uncovered, for at least two hours. Add more water as needed. An hour in, remove the hock, take the meat off the bone, and add both the bone and the meat back. Taste and salt if necessary before serving.
- Serve with cornbread, here:
- Notes: You can use any bean you like, but I strongly prefer pintos. I add a teaspoon of pepper, but I love pepper. Add more if you want. Some prefer this soupy and some prefer it thicker. Delicious either way.
