How to make it

  • Preheat oven to 425.
  • Put butter or drippings in a cast iron skillet and put in the hot oven.
  • Mix the dry ingredients. Blend in the milk and egg. Remove the cast iron skillet from the oven, swirl it to coat the sides, then pour the excess into the batter and blend.
  • Pour batter into the skillet, and bake for 25-30 minutes, until the top is a deep golden brown.

Sounds just like the way my Aunt Kitty used to make it. Add soup beans and a green onion, and we can all sit down to eat. Can't wait to try it!

You must have a small cast iron skillet. Does this recipe double?

See, we are the opposite. We call bondc's recipe southern cornbread, lol. Well, except for the white cornmeal part.

Drop down below the Mason-Dixon line and you've gotta put a little sugar in the mix and yellow cornmeal. Southern Sweet is the term. And pig fat, please. Save the butter for the hot bread and pass the butterbeans, if you please.
