How to make it

  • Saute onions in a bit of olive oil in a heavy iron skillet 'til just before browned.
  • Add garlic stirring until aromatic (I don't like to scorch the garlic).
  • Remove and set aside, in same skillet add salted and peppered beef in a bit more olive oil, brown over med. heat.
  • Remove and put in 1 layer in baking dish.
  • Put about an inch of water in skillet, scrape fond from the pan and add the onions and garlic.
  • Stir and simmer over med/high heat 'til most of the water is gone.
  • Meanwhile, mix wine and cold water (enough to make 2 c) with gravy mix.
  • Add gravy mix to onions in hot skillet and stir until thickened.
  • Pour mixture over beef in baking dish and heat in oven 'til bubbly.

    I made this for my family last night. Just pulled it out of my hat. And freaked their taste buds. I usually cook like that. That's why I don't have a bunch of recipes. It really tasted professional without a bunch of work!
