Smothered Cubed Beef

- 1.5 - 2 lb. cubed beef steaks shopping list
- 1 med. onion,chopped shopping list
- 1 - 3 garlic cloves, chopped shopping list
- 2 pkg. brown gravy mix shopping list
- .5 - .75 c red wine (I like merlot) shopping list
- 2 - 4 c water shopping list
- salt and pepper shopping list
- olive oil shopping list
How to make it
- Saute onions in a bit of olive oil in a heavy iron skillet 'til just before browned.
- Add garlic stirring until aromatic (I don't like to scorch the garlic).
- Remove and set aside, in same skillet add salted and peppered beef in a bit more olive oil, brown over med. heat.
- Remove and put in 1 layer in baking dish.
- Put about an inch of water in skillet, scrape fond from the pan and add the onions and garlic.
- Stir and simmer over med/high heat 'til most of the water is gone.
- Meanwhile, mix wine and cold water (enough to make 2 c) with gravy mix.
- Add gravy mix to onions in hot skillet and stir until thickened.
- Pour mixture over beef in baking dish and heat in oven 'til bubbly.
