Petit Pumpkin Pies

- 2 refrigerated ready to roll pie crusts shopping list
- 8 oz cream cheese, softened shopping list
- 1/2 cup brown sugar, light or dark shopping list
- 1 cup canned pumpkin shopping list
- 2 eggs shopping list
- 1 teaspoon vanilla shopping list
- 1 teaspoon pumpkin pie spice shopping list
How to make it
- Preheat oven to 350 degrees F
- Roll pie crusts out thinly on flat surface
- Using a round biscuit cutter, cut little mini crusts
- Press these little crusts gently into mini muffin tin
- Mix the other ingredients at medium speed
- Ladle this mixture (with an icecream scooper) into the crusts
- Bake 12-15 minutes
- Cool and serve or keep refrigerated until served
