How to make it

  • In a saucepan, combine amaretto, water, lemon juice and cinnamon stick. Bring to a boil.
  • Add apples, return to boiling. Reduce heat and simmer, covered, for 8 to 10 minutes, until apples are just tender, stirring occasionally.
  • Remove from heat and let apples stand in cooking liquid for 15 minutes. Remove cinnamon stick.
  • In a small mixer bowl, beat egg whites with electric mixer at medium speed, until soft peaks form.
  • Gradually add 1 Tbsp of apple cooking liquid, the sugar and lemon zest. Beat on high speed until stiff peaks form.
  • Divide apples and cooking liquid among six 6-ounce custard cups.
  • Top with egg white mixture.
  • Bake in 325 degree oven for 10 minutes until meringue turns light brown.
  • Serve warm.
