Ingredients
  • 1/3 cup amaretto
  • 1/4 cup water
  • 1 Tbsp lemon juice
  • 3 inch cinnamon stick
  • 4 medium cooking apples, peeled, cored and thinly sliced
  • 3 egg whites
  • 3 Tbsp sugar
  • 1/2 tsp lemon zest

Directions
  1. In a saucepan, combine amaretto, water, lemon juice and cinnamon stick. Bring to a boil.
  2. Add apples, return to boiling. Reduce heat and simmer, covered, for 8 to 10 minutes, until apples are just tender, stirring occasionally.
  3. Remove from heat and let apples stand in cooking liquid for 15 minutes. Remove cinnamon stick.
  4. In a small mixer bowl, beat egg whites with electric mixer at medium speed, until soft peaks form.
  5. Gradually add 1 Tbsp of apple cooking liquid, the sugar and lemon zest. Beat on high speed until stiff peaks form.
  6. Divide apples and cooking liquid among six 6-ounce custard cups.
  7. Top with egg white mixture.
  8. Bake in 325 degree oven for 10 minutes until meringue turns light brown.
  9. Serve warm.
