Amaretto Apples with Meringue

- 1/3 cup Amaretto shopping list
- 1/4 cup water shopping list
- 1 Tbsp lemon juice shopping list
- 3 inch cinnamon stick shopping list
- 4 medium cooking apples, peeled, cored and thinly sliced shopping list
- 3 egg whites shopping list
- 3 Tbsp sugar shopping list
- 1/2 tsp lemon zest shopping list
How to make it
- In a saucepan, combine amaretto, water, lemon juice and cinnamon stick. Bring to a boil.
- Add apples, return to boiling. Reduce heat and simmer, covered, for 8 to 10 minutes, until apples are just tender, stirring occasionally.
- Remove from heat and let apples stand in cooking liquid for 15 minutes. Remove cinnamon stick.
- In a small mixer bowl, beat egg whites with electric mixer at medium speed, until soft peaks form.
- Gradually add 1 Tbsp of apple cooking liquid, the sugar and lemon zest. Beat on high speed until stiff peaks form.
- Divide apples and cooking liquid among six 6-ounce custard cups.
- Top with egg white mixture.
- Bake in 325 degree oven for 10 minutes until meringue turns light brown.
- Serve warm.
