Apricot-Habanero Barbecue Sauce

- 1 yellow onion, finely chopped shopping list
- 2 cloves garlic shopping list
- corn or canola oil shopping list
- 1 yellow bell pepper, roasted, peeled, and seeded shopping list
- 2/3 cup (150 g) dried apricots shopping list
- 1 1/2 tablespoons apple cider vinager shopping list
- 3 tablespoons (1/2 dl) brown sugar shopping list
- 1 1/4 cups (3 dl) water shopping list
- 1 tablespoon Colmans powdered mustard shopping list
- 4 tablespoon habanero hot sauce shopping list
- salt shopping list
How to make it
- In a pan, sauté the onion and garlic in a little oil until soft. Add the remaining ingredients, except the mustard powder and habanero. Simmer, covered, for 20 minutes, or until the apricots are soft. Pour into a food processor. Season with mustard powder, habanero, and salt while processing to a smooth sauce.

Do you think this could be frozen? Probably, but better fresh.
Anyway going to have to grill it in the oven as we have snow on the ground now.
