Diabetic Key Lime Pie Recipe
Creamy elegant and very lucisious pie. Though it is diabetic it doesn't taste it. Serve with pride. Enjoy

Ingredients
  • 20 graham crackers crushed
  • 4 tablespoons butter melted
  • 2 packages sweetener
  • 1 tablespoon lemon peel
  • 13 ounce can evaporated skim milk
  • 2 teaspoons vanilla
  • 2 envelopes plain gelatin
  • 1/3 cup lime juice
  • 1 cup boiling water
  • 20 packages sweetener
  • Zest of 3 limes grated
  • Green food coloring

Directions
  1. Combine milk and vanilla then freeze for 30 minutes. Combine gelatin and juice in a blender then let set for 1 minute. Add boiling water and equal then blend until smooth. Chill for 45 minutes. Put frozen milk into a small chilled bowl and whip frozen milk until stiff. Food in lime zest then slowly add the gelatin mixture to whipped milk. Spoon into pie shells and garnish with lime slices and zest. To make crust crush crackers and add sweetener. Add butter then put in two pie plates and pat down. Chill in refrigerator for 1 hour.
