How to make it

  • Grill or broil the calves liver 3-4 minutes on each side
  • Saute the onion, garlic and green pepper until well softened
  • Minced the cooked liver and the hard boiled eggs and mix together well in a large bowl.
  • Add the cooked vegetables to the liver mixture and sprinkle the cajun seasoning on top - mix very, very well.
  • Use Pam to grease cups well and divide the mixture into the cups. Press the mixture down firmly in the cups.
  • Cover the cups with saran wrap and refridgerate over night.
  • Serve the chilled chopped liver with black bread or crackers as makes you happy.

    I love liver, and could eat it as a meal any time! Unfortunately, the rest of my family doesn't share my passion. A couple times I was able to sneak in some chicken liver pate into my hubby's sandwich, hidden under tomato, mustard and pickle. He didn't even notice. Shhh, don't tell him! LOL
