Cheesy Cactus Corn Bread Recipe

Ingredients

Ingredients:

4 cups all-purpose flour

2 cups yellow cornmeal

2/3 cup sugar

3 Tbs. baking powder

1 Tbs. salt

1 cup shortening ( Crisco in can or equivalent )

3 cups milk

4 eggs, beaten

½ cup finely shredded cheddar cheese

Directions

Preheat oven at 400.

In a large bowl, combine the first five ingredients; cut in shortening until the mixture resembles coarse crumbs. In a small bowl, combine milk and eggs; stir into dry ingredients just until blended.

For bread pour into a greased 13 x 9 x 2 inch baking pan or 4 small loaf pans. Sprinkle with cheese. Bake at 400 for 25 minutes or until golden brown. Cool on wire rack for 5 minutes Cut the bread in the larger pan into squares. Yields: 16-20 servings.

NOTE: To make the Cactus-shaped corn bread, fill well-greased Cactus molds almost full. Sprinkle each with 1 teaspoon of cheese. Bake at 400 for 13 – 15 minutes or until golden.
