Ingredients
  • 4 T (or less, as needed) Olive Oil
  • 2-cans chickpeas or garbanzos
  • 2 small yellow cooking onions
  • 2 cloves or more garlic, to taste (cloves, not bulbs!)
  • 1/2 cup fresh parsley
  • 4 T flour
  • 2 t cumin
  • 1 t baking powder

Directions
  1. Pour oil into large baking dish, and tilt to coat. Place in oven and heat to 350 Degrees (F).
  2. Meanwhile, drain and rinse chickpeas and place in food processor.
  3. Chop onions and garlic slightly and add to food processor with chickpeas, and add parsley.
  4. Process until smooth and doughy.
  5. Transfer into bowl and stir in flour, cumin, and baking powder.
  6. Shape into 16 balls and place in preheated pan.
  7. Bake 10 minutes and turn each patty; continue baking another 10 minutes, or until golden brown.
  8. Serve as sandwiches in pita bread, or on lettuce.
  9. Enjoy!
