Baked Falafel

- 4 T (or less, as needed) olive oil shopping list
- 2-cans chickpeas or garbanzos shopping list
- 2 small yellow cooking onions shopping list
- 2 cloves or more garlic, to taste (cloves, not bulbs!) shopping list
- 1/2 cup fresh parsley shopping list
- 4 T flour shopping list
- 2 t cumin shopping list
- 1 t baking powder shopping list
How to make it
- Pour oil into large baking dish, and tilt to coat. Place in oven and heat to 350 Degrees (F).
- Meanwhile, drain and rinse chickpeas and place in food processor.
- Chop onions and garlic slightly and add to food processor with chickpeas, and add parsley.
- Process until smooth and doughy.
- Transfer into bowl and stir in flour, cumin, and baking powder.
- Shape into 16 balls and place in preheated pan.
- Bake 10 minutes and turn each patty; continue baking another 10 minutes, or until golden brown.
- Serve as sandwiches in pita bread, or on lettuce.
