How to make it

  • Preheat oven to 350.Combine olive oil with garlic,basil,salt,thyme,parsley,rosemary and coarse ground pepper. Rub the pork all over with olive oil and herb mixture. Place on a rack and roast at 350 for 1 hour and 15 mins or till thermometer registers 140-145. Temp. will rise about 10 degrees while resting.
  • Transfer to serving tray and cover and let rest while you make the sauce.
  • For the sauce,pour pan drippings into a skillet. Add butter,cook over med. heat till butter melts. Whisk in flour until smooth and bubbly. Gradually whisk in the stock ,tomato paste,sage and fresh ground black pepper;cook over med. heat,whisking constantly,2 to 3 mins or till thickened. Slice the roast and serve sauce over the pork,under the pork or on the side.
