Pork Loin with Herb Crust

- 1 loin rack of pork,bone-in (4 lbs or 4-5 ribs) shopping list
- 1 Tbs olive oil shopping list
- 3 large garlic cloves,minced or 3/4 tsp minced garlic shopping list
- 1-1/2 tsp kosher salt shopping list
- 1-1/2 tsp basil shopping list
- 1-1/2 tsp thyme shopping list
- 1-1/2 tsp parsley shopping list
- 1-1/2 tsp cracked rosemary shopping list
- 1 Tbs coarse ground black pepper shopping list
- 3/4 c butter,cut up (1-1/2 sticks) shopping list
- 1/2 c flour shopping list
- 4 c chicken stock (4 c water plus 3 tsp. chicken soup base) shopping list
- 2 tsp. tomato paste shopping list
- 1 tsp rubbed sage shopping list
- 1/4 tsp fresh ground pepper shopping list
How to make it
- Preheat oven to 350.Combine olive oil with garlic,basil,salt,thyme,parsley,rosemary and coarse ground pepper. Rub the pork all over with olive oil and herb mixture. Place on a rack and roast at 350 for 1 hour and 15 mins or till thermometer registers 140-145. Temp. will rise about 10 degrees while resting.
- Transfer to serving tray and cover and let rest while you make the sauce.
- For the sauce,pour pan drippings into a skillet. Add butter,cook over med. heat till butter melts. Whisk in flour until smooth and bubbly. Gradually whisk in the stock ,tomato paste,sage and fresh ground black pepper;cook over med. heat,whisking constantly,2 to 3 mins or till thickened. Slice the roast and serve sauce over the pork,under the pork or on the side.
