Ingredients
  • 2 lb ground beef or lamb
  • 1/2 bundle parsley or dill (finely chopped)
  • 1 teaspoon ground cumin
  • 3 tablespoons corn oil
  • 2 medium sized onions
  • 1 teaspoon ground black pepper
  • 1 cup yogurt
  • salt

Directions
  1. Peel and finely grate the onion; add it to the meat with the parsley, half the salt and the pepper.
  2. With wet hands mix thoroughly and shape into small balls.
  3. Heat the oil in a pan, add the kebab balls and place over a low heat. Cover the pan and leave for fifteen minutes until the meat juices have reduced, leaving only oil.
  4. Mix the yogurt with the remaining salt and pepper.
  5. Arrange the kebabs on a serving dish, pour yogurt on top and serve hot with either:
  6. rice
  7. french fries
  8. wedges
  9. mashed potatoes.
  10. parsly and onion salad

I have a friend from Pakastan who is a marvelous cook. He was the one that introduced me to 'grating' onions and I love the result. He made something similar to this and it was wonderful - I look forward to trying this.


Can i use chicken instead? and if i can, is there any special way i need to do for the preparation of chicken, like using boiled ones and shredding them?

my friends brought me to a place here that serves kebab; i had the chicken kebab instead of beef and i was delicious.
