Zucchini Casserole

- 2 lbs green an yellow zucchini (cubed) shopping list
- 1 large chopped onion shopping list
- 1/4 lb butter shopping list
- 1 bag of cubed stuffing (14 oz bag) shopping list
- 1 can cream of chicken soup (undiluted) shopping list
- 1 (8 oz) sour cream shopping list
- 2 tbsp cream or milk shopping list
- Seasonings: shopping list
- salt, pepper, garlic powder shopping list
How to make it
- Steam cubed zucchini and chopped onion till slightly tender
- Melt butter and spread over bottom of 9 x 13 pan or 4 qt casserole pan
- Spread 1/2 bag of cubed stuffing over butter
- In a bowl mix cream of chicken soup and sour cream together with milk
- Add seasonings
- Add vegetables to bowl and mix
- Pour over stuffing in pan
- Add other 1/2 of bag of stuffing over veggie/soup mixture
- Bake at 350 for 30 minutes or till bubbly and hot

The thought that came to mind the first time I made this dish was, "Heaven!" Using yellow and green zucchini makes an easy, perfect and delicious meal. It was a joy to cook and easily made two smaller casseroles. One for today, one tomorrow!
