Pumpkin Cupcakes with Maple Cream Cheese Frosting

- Cupcakes: shopping list
- 2 1/4 cups flour shopping list
- 1 tbls. baking powder shopping list
- 1/2 tsp. baking soda shopping list
- 1/2 tsp. salt shopping list
- 1 tsp. cinnamon shopping list
- 1 stick butter, softened shopping list
- 1 1/3 cups brown sugar, packed shopping list
- 2 eggs shopping list
- 1 cup canned pumpkin shopping list
- 3/4 cup milk shopping list
- 3/4 cup walnuts or pecans, chopped shopping list
- frosting shopping list
- 1/2 stick butter, softened shopping list
- 8 oz. cream cheese, softened shopping list
- 3 cups powdered sugar shopping list
- 1/2 cup maple syrup shopping list
- 2 tsp. vanilla extract shopping list
How to make it
- Preheat oven to 375
- Line 2 muffin tins with liners
- Sift together flour and next 4 ingredients
- In another mixing bowl, beat butter and brown sugar until light and fluffy
- Add eggs, 1 at a time, beating well after adding each egg
- Add pumpkin, beating on low until combined
- Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour until combined
- Stir in nuts
- Spoon batter into muffin cups, filling each about 2/3 full
- Bake 25 minutes or so
- Cool on baking rack
- Frosting
- In large mixing bowl, add all ingredients and beat until smooth
- Spread icing onto top of cooled cupcakes
