A very tender spicy beef, place this on a roll and wow. Great for the brunch or get-together. Adapted from Ginny Koeppen's recipe posted in the Light and Tasty Magazine Oct/Nov 2002.

  • Ingredients:
  • 1 boneless beef sirloin tip roast ( about 3 pounds ), cut in half
  • ½ cup water
  • 1 can ( 4-oz ) diced jalapeno peppers, drained
  • 1 envelope Italian salad dressing mix
  • 12 crusty rolls ( 5 inch size )

Directions
  1. Slow Cooker:
  2. Place beef in a 5-qt slow cooker. In a small bowl, combine the water, jalapenos and dressing mix; pour over beef. Cover and cook on low for 8 – 10 hours or until meat is tender. Remove beef and shred using two forks. Skim fat from cooking juices. Serve beef on buns with juice.
  3. Serving size: 1
  4. Calories per serving: 357, Fat: 9g, Cholesterol: 68mg, Sodium: 877mg, Carbohydrate: 37g
