Indian Corn Stew Recipe

Ingredients

1 tbsp vegetable oil (or olive oil)

1-1/2 lb ground beef

1 large chopped onion

2 cloves minced garlic

1-1/2 cups sweet peppers (cored, seeded & chopped)

4 cups frozen corn

1 can (28 oz) crushed tomatoes

4 tsp Worcestershire sauce

1/2 tsp pepper

1 tsp chili powder

1/4 tsp salt

1/8 tsp cayenne pepper

1 medium zucchini sliced thinly crosswise

Directions

In a 6 quart Dutch oven heat oil over moderately high heat

Add beef, onion and garlic and cook stirring frequently for 8 minutes or until browned

Lower heat and stir in sweet peppers and simmer uncovered for 5 minutes or until peppers are tender, stirring occasionally

Stir in corn, tomatoes, Worcestershire and seasoning

Bring to boil

Lower heat and cover for 45 minutes

Add zucchini then simmer 5 minutes or longer until vegetables are tender
