Black Bean And Corn Salsa-salad Recipe

This delicious salsa/salad recipe is courtesy of Southern Living Magazine. I serve it as a salsa with tortilla chips and it goes like crazy! You can make as much as you want, which is my way of saying I do not know the number of servings....ha!

Ingredients
- 1 17 oz. can corn (drained)
- 2 -15 oz. cans black beans (drained and rinsed)
- 2 large tomatoes (chopped)
- 1 large red onion (chopped)
- 1/8 to 1/4 cup cilantro (chopped)
- 1 large avocado (chopped)
- Dressing:
- 3-4 Tablespoons lime juice
- 2 Tablespoons olive oil
- 1 Tablespoon red-wine vinegar
- 1 teaspoon salt
- ½ teaspoon pepper
Directions
- Combine , cover and chill! Easy, huh?
- I use one whole bunch of cilantro and 2 to 3 avocados.
