I have modified this recipe to a diabetic friendly one. The non-diabetic was posted by Molly Mason's which she change from the original. She posted it in the Quick Cooking Magazine March/April of 2001. I alos attached the original photo.

  • Modified Ingredients:
  • 6 cups frozen Corn ( no salt added )
  • 2 Jars ( 4-oz each ) sliced Pimientos, drained
  • 1 green onion, sliced and quartered
  • 1 small green pepper, diced
  • 2 Tbs. Margarine or butter
  • 1 Tbs. Chili powder
  • 1 Tbs. ground Cumin
  • ½ tsp. Salt or low sodium salt

Directions
  1. In a large sauce pan, combine all the ingredients. Cover and cook over medium heat for 10 minutes or until vegetables are tender.
  2. Diabetic Friendly
  3. Serving size: 1 cup
  4. Calories per serving: 138, Fat: 3g, Cholesterol: 8mg, Sodium: 170mg, Carbohydrate: 24g
  5. Note: I have modified the ingredients of this recipe for a diabetic friendly one and also lowered the sodium, salt and fat from the original.
