Mexicorn Diabetic Friendly

- Modified Ingredients: shopping list
- 6 cups frozen corn ( no salt added ) shopping list
- 2 Jars ( 4-oz each ) sliced pimientos, drained shopping list
- 1 green onion, sliced and quartered shopping list
- 1 small green pepper, diced shopping list
- 2 Tbs. margarine or butter shopping list
- 1 Tbs. chili powder shopping list
- 1 Tbs. ground cumin shopping list
- ½ tsp. salt or low sodium salt shopping list
How to make it
- In a large sauce pan, combine all the ingredients. Cover and cook over medium heat for 10 minutes or until vegetables are tender.
- Diabetic Friendly
- Serving size: 1 cup
- Calories per serving: 138, Fat: 3g, Cholesterol: 8mg, Sodium: 170mg, Carbohydrate: 24g
- Note: I have modified the ingredients of this recipe for a diabetic friendly one and also lowered the sodium, salt and fat from the original.
