How to make it

  • Wash the mushrooms and cut into quarters. Place in casserole dish. Add artichoke hearts and asparagus on top of mushrooms.
  • In a separate bowl, combine soup, sour cream, salt, pepper and garlic. Stir well then our over veggies.
  • Cover casserole dish and bake at 350 for about 45 minutes, until hot & bubbly all the way through and the mushrooms are tender.
  • When the casserole is almost done, cook up some rice.
  • Spoon mushroom mixture over rice and enjoy!
  • Variation:
  • This recipe is also great with chicken. Just add 3 or 4 chicken pieces, such as split breasts. Pour veggies and soup over the top and bake until the chicken is done (about an hour). Serve over rice.

    I know Samhain is an autumn festival, but this recipe is exactly what I want THIS time of year -- very, very early spring, when it's still chilly out but the days are getting longer. Mushrooms, artichokes, asparagus and sour cream - it's heaven in a casserole! Thanks so much.
