Samhain Mushroom Casserole
From deliathecrone 14 years agoIngredients
- 1 8oz package mushrooms (if you want to be really creative, use a few different types of mushrooms) shopping list
- 1 small package frozen artichoke hearts (or canned packed in water, as long as they are NOT marinated) shopping list
- 1 can asparagus (fresh or frozen can also be used) (personally, I don't care for asparagus, so I leave them out) shopping list
- 1 can cream of mushroom soup shopping list
- ½ to 1 cup of sour cream shopping list
- salt, pepper & garlic to taste shopping list
- cooked rice shopping list
How to make it
- Wash the mushrooms and cut into quarters. Place in casserole dish. Add artichoke hearts and asparagus on top of mushrooms.
- In a separate bowl, combine soup, sour cream, salt, pepper and garlic. Stir well then our over veggies.
- Cover casserole dish and bake at 350 for about 45 minutes, until hot & bubbly all the way through and the mushrooms are tender.
- When the casserole is almost done, cook up some rice.
- Spoon mushroom mixture over rice and enjoy!
- Variation:
- This recipe is also great with chicken. Just add 3 or 4 chicken pieces, such as split breasts. Pour veggies and soup over the top and bake until the chicken is done (about an hour). Serve over rice.
